From your attached image, it looks like you're probably making the selection with the Rectangular Marquee tool and then choosing "crop" from the Image menu. I often crop that same way, but you must make sure that "Feather" is set to zero, in the options bar, or you will get the effect you show in your attachment. Hope this is helpful.
